Lobster Boss concept was formed to feed his cravings for authentic Lobster rolls in Hong Kong. It initially began with a single pop up at a farmers market on Discovery Bay, the team were literally blown away by the reception of the Lobster Rolls by the local residents, they sold out all 300 rolls by 3pm on the first day. Swire soon came knocking and invited Lobster Boss for a 2 months pop up in a food truck at their Tong Chong Street Market in Quarry Bay, the queues were around the corner from day one, Larry The Lobster our cheeky mascot was introduced to the Hong Kong public at this market and he soon became the star of the show.
It's all about the product says Jo Sutton the Founder: “we import the lobster meat directly from the fishermen who sustainably harvest their catch from the pristine cold waters of Nova Scotia, Canada. The raw materials are so great that we only need to add a few secret ingredients to enhance the natural flavour of the lobster claw and leg meat”
Lobster Boss will opened at The Food Playground at K11 Musea, TST in April 2023. Other pop-up locations are planned for the food court at Sogo, Causeway Bay and also a food truck at Airside Kai Tak.
